    There are a bunch of tiny bones right there. You can feel them with your finger. That is why tilapia fillets look like a mitten.

    Good to know.

    This video makes it seem pretty easy but, as my dad always says, "everything is easy once you know how to do it". I suck at cleaning fish but it's only from lack of doing it since I rarely go fishing. I'm sure after I clean a dozen fish in a short time frame I'll be pretty good at it.

    I've cleaned a bunch of tilapia by hand with a standard fillet knife. I see exactly what he's doing, so I know with a little practice it will be as easy as it looks in the video. Particularly slick is not scaling, and just removing the skin at the end, plus getting rid of those pesky little bones.

    Now I need to find out how to make tilapia leather! I've seen it for sale, but have no idea how they tan it.

    from what I saw, it looks like he's wasting a lot of the meat around the front fins ..... maybe he throws all the bones and wasted meat into a pot for fish stew or something .....

    I'm looking for a local tannery to work with. Right now I haven't a clue how to tan fish skin, but it seems sad to waste something like this.
