I will admit I do not have much growing experience so this may seem like a silly question to some. I have some lettuce now growing in my system, PIFT flood and drain. After some growing pains, pun intended, my iceberg lettuce is growing strong. It has not yet formed the head but I understand by reading that this is not unusual until late in the growing process. My question is this, are the large leafs at the bottom of the stalks able to be used as leaf lettuce and thus begin to utilize these very large leafs? Yes, yes, my impatience is showing for all to see. I planted this on 8/28/13.

I've never grown iceberg, but that looks delicious to me.

If you don't plan on letting them head out, you can eat the leaves as they are ready to eat. I have never let them form a head. I just eat the small leaves until the weather becomes inhospitable for lettuce. Enjoy!

I never let the head out...the leaves are as good as loose leaf lettuce and taste great

Oh boy! That's just what my impatience was wanting to here. Mr. Blackthumb will be having salad for lunch and pieces on each of my sandwich. Got 4 more plants growing in the background so when all you see is gone, the others should be about ready. Success will surely taste sweet. Now to see if the broccoli and spinach can flourish as well. :D

Eat what you want. Don't strip them all at one time. The rest is more of an art than a science. I used to do this regularly. Bon Appétit!
